Italian Pasta Salad
There are so many ways to mix up your ‘pasta’ routine. It does not always have to be noodles and sauce and noodles and sauce. This Italian Pasta Salad is refreshing and a great way to use up some of the random vegetables you have around the house before they go bad. It is also a great excuse to indulge in some great quality cheese and salami. You can use any oil dressing you wish (a Greek dressing would actually be good too or Italian dressing, but we like to keep it simple with oil, salt & pepper).
Ingredients
2 Cups Cooked Pasta of choice
1 Cup Salami, thick cut into 1/4’s
1 Cup Mozzarella Fresca, chopped
1/2 Cup Black Olives, sliced
1/2 Cup Sundried Tomatoes, chopped
1/2 Cup Fresh Parsley, chopped
1/2 Green Pepper, chopped
1/4 Red Onion, sliced
2-4 Tbsp. Olive Oil
Salt & Pepper to Taste
Directions
Combine all ingredients in a large bowl and mix well. Add additional salt, pepper or oil as needed but better to start slow then to add too much. Good for 2-3 days in the fridge.
