Roasted Garlic Parm Potatoes

Mashed Potatoes are a classic holiday potato. Simple. Delicious. There is NOTHING wrong with mashed potatoes for holiday dinners but as I have said .. holidays will look different this year so why not take the opportunity to get creative. These Roasted Garlic Parm Potatoes are a great opportunity to have some fun!

Ingredients

  • 1 Bag Small Red Potatoes, washed & halved or cut into 1/4 depending on size

  • 1/2 - 1 Cup Parmsan Cheese

  • 2-3 Tsp. Garlic Powder or EVOO Garlic Salt

  • 1-2 Tsp. Salt (omit if using the EVOO garlic salt)

  • 1-2 Tsp. Pepper

  • 1-2 Tsp. Dried Parsley

  • Cooking Spray

Directions

  • Pre-heat oven to 400F degrees.

  • Spray the bottom or a glass baking dish with cooking spray then evenly spread with parmesan cheese. Sprinkle with hearty portions of desired seasonings.

  • Lay the potatoes cut side down on the parmesan nice and snug in a single layer. A few may have to be squished in on top. Sprinkle with additional salt, pepper & garlic powder.

  • Bake about 45 minutes or until potatoes are fully cooked and soft. Also ensuring that the parmesan cheese has browned well.

  • Scoop out of pan into a bowl, separating out into smaller portions if necessary parm side up and sprinkle with dried or fresh parsley flakes.
