Roasted Garlic Parm Potatoes
Mashed Potatoes are a classic holiday potato. Simple. Delicious. There is NOTHING wrong with mashed potatoes for holiday dinners but as I have said .. holidays will look different this year so why not take the opportunity to get creative. These Roasted Garlic Parm Potatoes are a great opportunity to have some fun!
Ingredients
1 Bag Small Red Potatoes, washed & halved or cut into 1/4 depending on size
1/2 - 1 Cup Parmsan Cheese
2-3 Tsp. Garlic Powder or EVOO Garlic Salt
1-2 Tsp. Salt (omit if using the EVOO garlic salt)
1-2 Tsp. Pepper
1-2 Tsp. Dried Parsley
Cooking Spray
Directions
Pre-heat oven to 400F degrees.
Spray the bottom or a glass baking dish with cooking spray then evenly spread with parmesan cheese. Sprinkle with hearty portions of desired seasonings.
Lay the potatoes cut side down on the parmesan nice and snug in a single layer. A few may have to be squished in on top. Sprinkle with additional salt, pepper & garlic powder.
Bake about 45 minutes or until potatoes are fully cooked and soft. Also ensuring that the parmesan cheese has browned well.
Scoop out of pan into a bowl, separating out into smaller portions if necessary parm side up and sprinkle with dried or fresh parsley flakes.
