Spicy Shrimp a la Vodka

Fall is practically here and to be honest … we are here for it. We are all about comfort food and this is pasta season for us so why not kick if off with this super easy (and fairly healthy) dinner.

Ingredients

  • 1 Pack Colossal Shrimp, deveined + tail removed

  • 170g (dry) High Protein Spaghetti Noodles

  • 1 Can San Marzano Tomatoes

  • 2 Cups White Mushrooms, quartered

  • 1/4/-1/2 White Onion, sliced

  • 1 Jalapeno, finely chopped

  • 3 Cloves Garlic, minced

  • 1/4-1/2 Cup Vodka

  • 2-3 Tsp. JamDinners Creole Seasoning

  • 1-2 Tsp. JamDinners Italian Seasoning

  • 1/2 Cup Fresh Parsley, chopped

  • Salt & Pepper to taste

  • Parmesan Cheese, grated as desired

  • 2-3 Tbsp. Olive Oli for cooking

Directions

  • Cook pasta noodles per instructions on box.

  • While pasta noodles are cooking, dump the can of san marzano tomatoes into a large bowl and using your hands or an immersion blender, lightly break down the big chunks of tomato. Set aside.

  • Toss the shrimp with the creole seasoning and ensure a good even coating. Heat olive oil over medium-high heat in a pan and add the shrimp. Cook fully on all sides, remove from pan and set aside.

  • Add the vodka to the shrimp pan to de-glaze. Cook down the alcohol and then add in the mushrooms and onions. Season with salt & pepper. Saute approx. 5-6 minutes.

  • Add in the chopped jalapeno and keep cooking. Gently push the veggie mixture to the side and add in the minced garlic. Cook until fragrant, approx 60 seconds.

  • Add in the san marzano tomatoes, season with the Italian Seasoning and then add in 1/2 of the chopped parsley.

  • Drain the pasta noodles and add them to the sauce, feel free to add a little of the starch water if desired as well. Add the shrimp back in. mix well.

  • Plate as desired then top with remaining parsley & parmesan cheese.
